Jowl Bacon, Guanciale - As you know, all of the meats on The Boardroom's charcuterie boards are smoked and cured in-house, and the same is true for our deli items. One of our lesser known deli products is our smoked Guanciale, also known as "Jowl Bacon".
Sold in 1lb slabs (not sliced), each cut is sourced here in Northern California. They're dried with cayenne pepper and a touch of allspice, before slow smoking to a mahogany red exterior.
Use: Grill thick cuts indirectly, slice thinly for breakfast and as a top for homemade pizza. Our Guanciale is also the perfect solution for adding depth to soups, stews, and stock.
